At the Farmer's Market there is an assortment of vendors who sell chile. This vender had dried red chile that can be used for a variety of dishes. One of my favorite happens to be Breakfast Enchiladas with Red Chile. A little bacon, eggs, wrapped in a flour tortilla with melted cheese and red chile.

"Medium" to the vendor may mean "HOT!" to the customer.
I'd have to get some of the kind in the back under the sign that says "hot".

I love red chile. I usually pick red, and on rare occasion green, though every once in a while, I enjoy picking "Christmas."
