How do you like it?


At the Farmer's Market there is an assortment of vendors who sell chile. This vender had dried red chile that can be used for a variety of dishes. One of my favorite happens to be Breakfast Enchiladas with Red Chile. A little bacon, eggs, wrapped in a flour tortilla with melted cheese and red chile.

I love red chile. I usually pick red, and on rare occasion green, though every once in a while, I enjoy picking "Christmas."
