As you can see there is no shortage of cook books that will teach anyone how to cook the foods of Santa Fe. The food here is different than the Mexican food that I grew up with. How you may ask? It's all in the Chile, the spicier the better.
We get packaged mexican food here in Switzerland, and I've grown accustomed to it...that is until my friend from Wyoming came to visit and made no bones about setting me straight "These are not tortillas!" :) Bon appetit!
How true about Santa Fe or New Mexico cuisine. I just made a batch of Chimayo Red Chile this week. Love it. I always stock up on many local products when in NM and I have several NM cookbooks. Nothing better. Thanks for the photo. Have a great weekend.
Hi Randy, I'm back posting on my brand new iMac! A friend just returned from Abq and brought me some ground chili...have to drag out my SF cookbooks to find a good recipe now.
My husband would love it there, he loves to eat spicy food. My mouth and stomach can't handle it. He'll try something and I'll ask if it's spicy and he'll say "no" and I'll try it and my mouth will be on fire, but to him it's bland and not hot. Maybe it's something where if I tried stuff and gradually increased the level of spicy, that I'd tolerate it more.
I am not so used to spiced food, but when I try it it's usually good. I bet this would be the case there!

So, Randy, do you do any of the cooking out there, or are you, like me, an eating specialist?
