Blue Corn Anyone?

Blue corn is used for many different recipes, from blue corn pancakes to blue corn tortillas. Here we have it whole before it's grounded up into corn meal. One of my favorite dishes with blue corn tortillas is blue corn chicken enchiladas with green chili. Darn now I'm hungry. Click on the photo for a better look.

  4. I have never seen blue corn. Thank you for this. How do they make it? Does it grow the same as the regular corn?

  5. The blue almost seems like a color not "found in nature" -- almost purple. I like the way your photo almost makes a window to the people beyond.
